This comforting Italian dish takes inspiration from the Tuscan countryside recipes of rich bean stews. We simmer lots of vegetables and tomatoes with butterbeans, cannellini beans and borlotti beans until they are soft and creamy and finish with some fresh green herbs and a splash of lemon juice. Perfectly served with some bread and butter. Suitable for freezing.
